Inside Silargan

A steel core, wrapped in functional ceramic

Silargan came out of Riedlingen in 1989 and has not needed a successor since. Cut through a Silargan saucepan and you find a steel core carrying heat through the base and up the walls, sealed inside pore-free ceramic that is nickel-free, taste-neutral and resistant to acids. Nothing flakes, because there is nothing layered on top to flake.

Pore-free, taste-neutral

The surface closes completely, so sauces do not pick up metal notes and nothing seeps into the material. That is why Silargan suits recipes that lean on delicate flavors.

Nickel-free where it counts

The cooking surface contains no nickel. If nickel sensitivity has pushed you away from stainless steel cookware, this is the Silit material to look at.

Heat that holds its line

The steel core stores heat and releases it evenly across the base. Sear without hot spots, brown a roux without chasing the burner ring.

Scratch-resistant, coating-free

Silargan resists cuts and abrasion by material, not by coating. Metal spoons and whisks are not a crisis, and there is no nonstick layer to wear through.

Not every kitchen needs a full set of Silit pots and pans. These are the single pieces that leave the warehouse fastest: the iconic pressure cooker, the pans from the Professional intensive line, a wok for four, and the Talis pair for quick nights.

Sicomatic®

The pressure cooker that taught Germany to cook faster

Silit has made Sicomatic pressure cookers since 1927, when the first model went on sale as the Siko. In 1975, Sicomatic-S put the cooking regulator into the handle for the first time anywhere. Today’s t-Plus keeps that layout: pressure, setting and release in one hand, plus a TÜV-tested safety system with multiple overpressure protections.

  • Cuts cooking time for beans, stews and root vegetables
  • TÜV-certified multiple safety system
  • Regulator built into the handle since 1975
  • Silargan body with a 30-year warranty

Which material?

Silargan vs nonstick vs stainless steel

Three materials, three jobs. One note before the table: Silargan behaves close to nonstick in daily cooking - food releases and cleaning is quick - but it is ceramic fused around steel, not a coating applied on top.

Since 1920

A German workshop that kept its address

Silit started in 1920 with a steel pot made under a WMF roof in Geislingen. In 1956 the whole Silit production moved to a new plant in Riedlingen on the Danube, and that is where Silargan cookware is still made. Same river, same trade, a hundred years of Mondays.

The milestones are honest ones: the first pressure cooker in 1927, the regulator in the handle in 1975, Silargan functional ceramic in 1989, and a 30-year warranty that has outlived several owners of the brand. Since 2016 the Riedlingen works has run as a pure production site - the part of the brand that touches steel every day.

Silit reviews

What Silit cooks say after years

New pans collect five stars in week one. These are the themes that keep coming back in long-term Silit reviews from owners of Silargan cookware and Sicomatic pressure cookers.

  • Bought the red Passion set for our wedding in 2019. It has been in the dishwasher twice a week since. No chips, no scratches from the whisk, and my nickel allergy has not complained once.
Marlene K. Ulm · Silargan Passion set
  • The pressure cooker is the one thing I would grab in a fire. Beans in half an hour without soaking, and the valve makes enough noise that you never forget it is working.
    Jonas B. Hamburg · Sicomatic t-Plus
  • I sauté hot and the pan browns to the edge - no pale ring in the middle. Heavy, but in a planted way. Three years in, it looks like the day it arrived.
Anna P. Zurich · Silargan Professional sauté pan
  • Ordered the big set when we moved. Ten pieces sounded excessive; it turned out to be just right for four people who cook. Glass lids mean fewer lifted covers.
    Stefan R. Vienna · Toskana 10-piece set
  • The set costs less than replacing a branded nonstick pan every couple of years. Silargan is its own thing - not slippery like coated nonstick, and now my preference for anything with a sauce.

Questions

What cooks ask before buying Silit

The questions that come up most about Silargan, induction, nickel, cleaning and the difference from coated nonstick - answered without the brochure voice.

What is Silit cookware made of?

Silit’s core material is Silargan: a steel core sealed inside pore-free ceramic layers, made in Riedlingen, Germany. The 1989 formula is nickel-free on the cooking surface, taste-neutral, and resistant to acids and scratches. Silit also makes aluminum and stainless lines, plus the Sicomatic pressure cooker range - the product listing names the material for each piece.

What is Silargan?

Silargan is Silit’s functional ceramic: a steel core for heat storage and distribution, wrapped in pore-free ceramic. It was introduced in 1989. The surface contains no nickel, does not absorb flavors or odors, and stands up to metal utensils without a coating to wear through.

Is Silargan safe for cooking?

Yes. The material is pore-free and nickel-free, so it releases nothing into food and adds no metal taste. Silargan has been in German kitchens since 1989, and Silit backs it with a 30-year warranty on cookware, inside and out, under the warranty terms.

Is Silit cookware made in Germany?

The Silargan cookware and Sicomatic pressure cookers are made in Riedlingen on the Danube, where Silit production has run since 1956. The brand dates to 1920 and is part of the WMF Group. Some accessory items are sourced elsewhere; the product listing names the origin when it differs.

Is Silit cookware induction compatible?

Yes. Silit pans use a ferromagnetic core or the Silitherm® all-hob base, which heats quickly and evenly on induction as well as gas, electric and ceramic hobs. Every current Silit series is induction-ready; check the listing if you are pairing a pan with an unusual hob.

Is Silit cookware dishwasher safe?

Many Silit pieces are dishwasher-safe, including most Silargan pots and pans. Handles and some lid components can be the exception, and heavily burnt-on residue still benefits from a short soak. The product listing for your specific piece gives the final word.

Can Silit cookware go in the oven?

Silargan pots and pans tolerate oven heat up to the rated limit for each piece, which covers braising, baking and finishing under the grill. Leave plastic lid knobs off in the oven and use the glass lid only within its rating; the product listing states the exact maximum.

Is Silit cookware scratch resistant?

Silargan resists cuts and abrasion by material, not by coating. Whisking, metal tongs and serving spoons are not a problem the way they are for PTFE nonstick pans. Sharp knifepoints are still sharp knifepoints - cut on a board.

Is Silit cookware nonstick?

Silargan is not a classic nonstick coating. It is a pore-free ceramic surface that behaves close to nonstick in daily cooking - food releases and cleaning is quick - without the coating that wears down. For full low-fat nonstick, Silit also makes ceramic-coated lines like Calabria and Talis.

Is Silit cookware nickel free?

The Silargan surface is nickel-free, which is why Silit is a common pick for cooks with nickel sensitivity. The steel core sits behind the ceramic layers and does not touch food.

How do you clean Silargan cookware?

Warm water, dish soap and a soft sponge handle most days, and many pieces can go into the dishwasher. For burnt-on patches, simmer water with a spoonful of baking soda and wipe. Skip steel wool and harsh abrasives; they are unnecessary on Silargan and dull the finish.

What is the difference between Silargan and nonstick cookware?

A nonstick pan carries a PTFE or ceramic coating sprayed onto a base. Silargan is the base: a steel core with pore-free ceramic fused around it, so there is no coating to flake or wear out. Coated nonstick wins on entirely fat-free eggs; Silargan wins on browning, lifespan and dishwasher confidence. Silit’s Calabria and Talis lines cover the ceramic-coated case between the two.
